[Citterio](http://www.citterio.com/page/view/citterio-in-expo-2015/), chosen to represent Italian cured meats at Expo Milano 2015, has focused on a traditional range that is simple, quick and… democratic. This is a two-story structure, a stone's throw from Palazzo Italia on the Cardo. At the entrance, after a super-fast automated payment (no fear for those who don't feel very “smart”, the hostesses are ever ready to lend a hand) you approach the counter and choose up to 7 portions of sliced meat, served by courteous staff who, armed with a slicing machine, will arrange the freshest of products on your cardboard tray. From San Daniele Ham to Bresaola from Valtellina, and from Speck from Alto Adige to [Salami Milano](http://www.citterio.com/page/view/family-company/). And in addition, Mortadella from Bologna,Parma Ham and [Cooked ham from Vignola](https://www.youtube.com/watch?v=LuGulgBkPTA). To eat them, munching your way through the complementary bread sticks, you can take a pew upstairs. How much? Excluding drinks, a tray with seven tasters comes at 7 Euro and offers a complete lunch. How come we like it so much? Because seemingly this is a tasting. But in reality it's a performance. Seven deli workers who create a marvelous ballet of slicing machines, knives, aprons and smiles.
