Founded in 1998 and working with master blacksmiths in Japan, the Japanese Knife Company stocks an impressive collection of high-end chefs knives which are often really beautiful objects. The staff are highly knowledgeable about the products and their manufacture, and you can test the knives out, being shown the correct way to hold and cut. They also offer a knife-sharpening service using the traditional wet stone method.
